Ingredients
2 cups cooked chicken breast, shredded or cubed
1 cup green apple, diced
1 cup red grapes, halved
1 cup celery, thinly sliced
2 cups romaine lettuce, chopped
1/2 cup toasted walnuts, roughly chopped
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
1. Wash and dry all produce. Dice apples, halve grapes, slice celery, and chop lettuce.
2. Toast the walnuts in a dry skillet for 3–5 minutes until fragrant. Let cool and chop.
3. If needed, cook chicken in boiling water for 15 minutes until cooked through. Let cool, then shred or cube.
4. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth.
5. In a large mixing bowl, combine chicken, celery, apples, grapes, and walnuts. Add dressing and toss to coat.
6. Gently fold in chopped romaine lettuce.
7. Serve immediately or chill for 30–60 minutes before serving for deeper flavor.
Notes
Toss the apples in lemon juice before combining to prevent browning.
Use rotisserie or leftover chicken for a quick and flavorful option.
Add lettuce just before serving to keep it crisp.
