Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
2 tablespoons butter (divided for chicken and rice)
4 cloves garlic, minced
1 teaspoon crushed red pepper (adjust to taste)
1 teaspoon Italian seasoning
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup jasmine or long grain white rice
1 tablespoon chopped parsley (optional, for garnish)
1 tablespoon diced red chili (optional, for garnish)
Salt and pepper to taste
Instructions
1. Cut the chicken into bite-sized chunks, pat dry, and season with Italian seasoning, garlic powder, crushed red pepper, salt, and pepper.
2. In a hot skillet, melt 1 tablespoon butter and sear the chicken until golden and fully cooked. Remove and set aside.
3. In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté until fragrant.
4. Add the rice and toast for 1-2 minutes. Pour in chicken broth, bring to a simmer, cover, and cook until rice is tender (15–18 minutes).
5. Stir in heavy cream and Parmesan cheese until creamy. If needed, loosen with a splash of broth.
6. In a separate pan, melt more butter with garlic, crushed red pepper, and parsley to create the scampi glaze. Add chicken and coat well.
7. Plate the creamy garlic Parmesan rice and top with chicken. Drizzle scampi sauce on top. Garnish with parsley and diced red chili.
Notes
Toasting the rice briefly before adding liquid helps develop a deeper flavor.
If the sauce thickens too much upon reheating, just add a splash of broth or cream to revive it.
For extra richness, finish with a squeeze of lemon juice right before serving.
