Description

Golden, crispy, and smothered in rich creamy gravy, this Chicken Fried Steak recipe is Southern comfort food at its best. Tender cube steaks are coated, fried until golden brown, and finished with a peppery homemade gravy that’s perfect over mashed potatoes or biscuits.


Ingredients

4 cube steaks

2 cups all-purpose flour

2 large eggs

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 cups vegetable oil (for frying)

2 tablespoons butter

3 tablespoons all-purpose flour (for gravy)

2 cups whole milk

1⁄4 teaspoon black pepper (for gravy)

2 tablespoons chopped green onions (optional, for garnish)


Instructions

1. In a shallow bowl, whisk together eggs and buttermilk. In another bowl, combine flour, salt, pepper, garlic powder, onion powder, and paprika.

2. Dredge each cube steak in seasoned flour, dip into egg mixture, then coat again in flour. Set aside on a wire rack for 10 minutes.

3. Heat oil in a skillet over medium heat (about 350°F). Fry steaks 3–4 minutes per side until golden brown and crispy. Drain on paper towels or rack.

4. Remove excess oil, leaving about 2 tablespoons in the pan. Add butter and melt. Stir in 3 tablespoons flour to make a roux.

5. Slowly whisk in milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

6. Serve chicken fried steak with warm gravy poured over and garnish with green onions if desired.


Notes

Letting the breaded steaks rest before frying helps the coating stay crisp and attached.

Use a thermometer to keep oil around 350°F for perfect frying.

For extra creamy gravy, use whole milk or add a splash of cream.
