Description

These crispy Chicken Coleslaw Egg Rolls are packed with tender ground chicken, crunchy coleslaw mix, and bold seasonings, then fried to golden perfection. They’re quick to make and perfect for parties, appetizers, or a satisfying snack.


Ingredients

1 pound ground chicken

3 cups coleslaw mix

2 cloves garlic, minced

1 teaspoon grated fresh ginger

2 tablespoons soy sauce

1 teaspoon sesame oil

2 green onions, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

12 egg roll wrappers

Oil for frying (vegetable or canola)


Instructions

1. Heat a large skillet over medium heat and add a drizzle of oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.

2. Add ground chicken to the skillet. Cook until browned and fully cooked through, breaking it up into small crumbles.

3. Stir in soy sauce, sesame oil, salt, and pepper. Mix thoroughly to coat the chicken.

4. Add the coleslaw mix and chopped green onions. Cook for 2–3 minutes until slightly softened but still crunchy. Remove from heat and let it cool.

5. Place an egg roll wrapper in a diamond shape. Spoon 2 tablespoons of the filling into the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a bit of water.

6. Heat oil in a deep pan to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes per side until golden brown. Drain on paper towels before serving.


Notes

Don’t overfill the wrappers—this prevents tearing and leaking during frying.

For extra crispiness, fry the egg rolls in small batches without overcrowding the pan.

Let the filling cool slightly before wrapping to avoid soggy wrappers.
