Description

This Chicken Cobbler Dinner Casserole is the ultimate comfort food—creamy shredded chicken and tender vegetables tucked under a golden, cheesy biscuit topping. It’s a hearty, one-dish meal perfect for weeknights, family dinners, or when you just want something warm and satisfying.


Ingredients

2 cups shredded cooked chicken

1 cup frozen peas and carrots

1 cup frozen corn

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese, divided

1 cup biscuit mix (like Bisquick)

1 cup milk

1/2 cup unsalted butter, melted


Instructions

1. Preheat the oven to 350°F (175°C). Place the butter in a 9×13 inch baking dish and put it in the oven to melt. Once melted, remove and swirl to coat the bottom.

2. Evenly layer the shredded chicken over the melted butter.

3. Add the frozen peas and carrots, followed by the frozen corn. Do not stir.

4. In a separate bowl, mix the biscuit mix, milk, and 1/2 cup of the shredded cheddar cheese until just combined.

5. Pour the biscuit mixture over the layered chicken and vegetables—do not stir.

6. In another bowl, whisk together the cream of chicken soup and chicken broth. Pour this mixture evenly over the top without mixing.

7. Sprinkle the remaining 1/2 cup of cheddar cheese on top.

8. Bake for 45–50 minutes, or until the biscuit topping is golden brown and the center is set.

9. Let the casserole rest for about 10 minutes before serving to allow the layers to set.


Notes

Letting the casserole rest after baking ensures the biscuit layer sets properly and scoops easily.

For extra flavor, season the chicken lightly with salt, pepper, or garlic powder before layering.

Don’t stir the layers—this is key for the cobbler-style texture.
