Ingredients
1.5 lbs boneless skinless chicken breast or thighs, cut into chunks
4 cloves garlic, minced
3 tablespoons unsalted butter, divided
1 tablespoon olive oil
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Cut chicken into bite-sized chunks and pat dry. Season with salt, pepper, and Italian seasoning.
2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.
3. Add chicken in a single layer. Cook 3–4 minutes per side until browned and cooked through. Remove and set aside.
4. Lower heat to medium. Melt remaining 2 tablespoons of butter in the same skillet. Add garlic and sauté for 30 seconds, stirring constantly.
5. Return chicken to skillet. Toss to coat in garlic butter sauce and let simmer for 1–2 minutes.
6. Sprinkle chopped parsley on top and serve warm.
