Ingredients

1 cup (2 sticks) unsalted butter, softened

2 cups shredded sharp cheddar cheese

2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup hot pepper jelly (or jelly of choice)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat the butter until creamy.
  3. Mix in the shredded cheddar cheese until well blended.
  4. Add flour and salt gradually, mixing until dough forms.
  5. Roll tablespoon-sized scoops into balls and place on the prepared baking sheet.
  6. Press a thumbprint into the center of each ball.
  7. Fill each indentation with about 1/2 teaspoon of hot pepper jelly.
  8. Bake for 12 to 15 minutes, or until lightly golden around the edges.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
