1 cup (2 sticks) unsalted butter, softened
2 cups shredded sharp cheddar cheese
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup hot pepper jelly (or jelly of choice)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the butter until creamy.
- Mix in the shredded cheddar cheese until well blended.
- Add flour and salt gradually, mixing until dough forms.
- Roll tablespoon-sized scoops into balls and place on the prepared baking sheet.
- Press a thumbprint into the center of each ball.
- Fill each indentation with about 1/2 teaspoon of hot pepper jelly.
- Bake for 12 to 15 minutes, or until lightly golden around the edges.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
