Description

It combines seasoned ground beef, tender rotini pasta, fresh lettuce, juicy tomatoes, and shredded cheddar cheese tossed in a creamy taco-inspired dressing. Ingredients

3 cups rotini pasta

1 pound ground beef

2 tablespoons taco seasoning

1 cup shredded cheddar cheese

1 cup cherry tomatoes halved

2 cups chopped romaine or iceberg lettuce

1/2 cup sour cream

1/3 cup mayonnaise

1 tablespoon lime juice

2 tablespoons chopped fresh cilantro

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente then drain and rinse with cold water

2. Cook the ground beef in a skillet over medium heat until browned and fully cooked then drain excess grease

3. Stir taco seasoning and a splash of water into the beef and simmer for 2 minutes until well coated

4. Whisk together sour cream mayonnaise lime juice salt and black pepper in a bowl to make the dressing

5. Combine cooked pasta seasoned beef shredded cheddar cheese cherry tomatoes and chopped lettuce in a large bowl

6. Pour the dressing over the mixture and toss until evenly coated

7. Sprinkle chopped cilantro on top and refrigerate for at least 30 minutes before serving


Notes

Add lettuce right before serving so it stays crisp and fresh

If the salad becomes thick after chilling stir in a spoonful of sour cream or lime juice to refresh the dressing

Add toppings like avocado olives tortilla chips or jalapenos for extra flavor
