Ingredients
1 pound ground beef
16 ounces Velveeta cheese, cubed
10 ounces Rotel tomatoes with green chilies (1 can, undrained)
1 tablespoon dry ranch seasoning
4 ounces cream cheese (optional, for extra tang and thickness)
2 tablespoons chopped cilantro or parsley (for garnish)
Instructions
1. In a large skillet over medium heat, cook the ground beef until fully browned. Break it into crumbles as it cooks. Drain excess grease.
2. Stir in the can of Rotel tomatoes (do not drain). Simmer with the beef for 2–3 minutes.
3. Add cubed Velveeta cheese to the skillet. Stir frequently as it melts into a creamy sauce. If using cream cheese, add now and stir until smooth.
4. Sprinkle in dry ranch seasoning and stir until everything is evenly combined. Adjust seasoning to taste.
5. Transfer the queso to a serving bowl. Garnish with chopped cilantro or parsley. Serve hot with tortilla chips, pretzels, or veggies.
Notes
Velveeta melts best, but you can swap in cheddar or Monterey Jack with a splash of milk to keep it creamy.
For a smoky kick, add chipotle powder or smoked paprika.
Keep it warm in a small crockpot if serving over a few hours at a party.
