Perfectly cooked rotini pasta, seasoned ground beef, and sweet corn are coated in a creamy ranch cheese sauce and baked to golden bubbly perfection. Ingredients

16 oz rotini pasta

1 lb ground beef

1 cup sweet corn (canned or thawed frozen)

2 cups shredded cheddar cheese

1 oz ranch seasoning mix (1 packet)

4 oz cream cheese or 1/2 cup sour cream

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C).

2. Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions. Drain and set aside.

3. In a large skillet, brown ground beef over medium heat. Drain excess grease. Season with salt and pepper.

4. Stir in sweet corn and cook for 2–3 minutes.

5. In a separate saucepan, add cream cheese or sour cream, milk, and ranch seasoning. Stir over low heat until smooth and creamy.

6. In a large mixing bowl or baking dish, combine pasta, beef, corn, and ranch sauce. Mix until everything is evenly coated.

7. Pour into a greased 9×13-inch baking dish and top with shredded cheddar cheese.

8. Bake for 20–25 minutes, or until cheese is bubbly and golden.

9. Let rest 5 minutes before serving.


Notes

Use full-fat cream cheese or sour cream for the creamiest texture.

Don’t overcook the pasta—al dente holds up best during baking.

Want extra heat? Add chopped jalapeños or a dash of hot sauce to the sauce.
