4 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup cooked ham or bacon, chopped

1 tablespoon butter or oil

1/4 teaspoon black pepper


Instructions

1. Peel and dice potatoes into small cubes. Rinse and pat dry.

2. Heat butter or oil in a large skillet over medium-high heat.

4. Stir occasionally and cook until fork-tender and crispy (about 10–12 minutes).

6. Push mixture to one side of skillet. Crack eggs into the empty space, season, and scramble gently until just set.

7. Combine eggs with potato mixture.
