Ingredients
1 pound ground beef
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1 packet taco seasoning
1 small onion, diced
2 cloves garlic, minced
1 tablespoon oil or butter
4 large flour tortillas
Optional: sliced jalapeños, chopped cilantro, sour cream
Instructions
1. Heat oil in a skillet over medium heat. Sauté diced onion until translucent.
2. Add minced garlic and cook for 30 seconds until fragrant.
3. Add ground beef and cook until browned. Drain excess grease.
4. Stir in taco seasoning and a splash of water. Simmer until thickened, then remove from heat.
5. Lay out each tortilla. Sprinkle cheese on one half, add beef mixture, top with more cheese, and fold.
6. Wipe skillet clean. Add butter or oil, then pan-fry each quesadilla 2–3 minutes per side until golden.
7. Let rest for 1 minute, then slice into wedges and serve warm with your favorite dips.
Notes
Use freshly shredded cheese for best melting results.
Don’t overfill the tortillas—this helps avoid messy leaks during cooking.
For extra crispiness, press down on the quesadilla with a spatula while frying.
