Ingredients
12 oz rotini pasta
1 lb ground beef
2 teaspoons Cajun seasoning (or to taste)
1 cup Velveeta cheese, cubed
1 1/2 cups Alfredo sauce
3 cloves garlic, minced
2 tablespoons butter
1/4 cup grated parmesan cheese
2 tablespoons chopped parsley (optional)
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente. Drain and reserve 1/2 cup of pasta water.
2. In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
3. Add ground beef and cook until browned and fully cooked through.
4. Stir in Cajun seasoning, mixing thoroughly to coat the beef.
5. Reduce heat to low. Add Alfredo sauce and Velveeta cheese cubes. Stir continuously until cheese melts into a creamy sauce.
6. Add a splash of reserved pasta water if the sauce is too thick.
7. Toss in cooked rotini pasta and stir gently to coat each piece. Simmer for 2-3 minutes to blend flavors.
8. Top with parmesan cheese and optional chopped parsley. Serve hot.
Notes
Use freshly grated parmesan for a better melt and more flavor punch.
Adjust Cajun seasoning for heat preference—mild or spicy.
