Description
This Cheesy Garlic Butter Linguine with Beef, Sausage and Spinach is the ultimate cozy dinner dish. Tender linguine noodles are coated in garlicky butter, tossed with sautéed spinach, savory beef and sausage, and topped with melted mozzarella and parmesan for that perfect cheesy finish.
Ingredients
2 tablespoons butter
4 cloves garlic, minced
8 ounces linguine pasta
1/2 pound ground beef
1/2 pound Italian sausage
4 cups fresh spinach
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/2 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
1 tablespoon olive oil
1/2 cup reserved pasta water
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine until al dente, then drain and reserve 1/2 cup of the pasta water.
2. In a large skillet, heat olive oil over medium heat. Add ground beef and Italian sausage, cooking until browned. Season with salt and pepper, then drain any excess fat.
3. Push the meat to one side, add butter and minced garlic. Cook for about 30 seconds until fragrant.
4. Add the spinach and stir until wilted.
5. Toss in the cooked linguine and pour in reserved pasta water. Stir to coat everything evenly.
6. Sprinkle mozzarella and parmesan cheese over the top. Cover the skillet with a lid or foil for 2–3 minutes, or broil briefly to melt and brown the cheese.
7. Serve hot, garnished with crushed red pepper flakes if desired.
Notes
Fresh spinach wilts better and holds its texture, but frozen can be used in a pinch—just drain well.
For an extra creamy twist, add 1/4 cup of heavy cream when mixing the pasta.
If broiling, watch carefully to avoid burning the cheese top—1 to 2 minutes is plenty.
