Description

This Cheesy Beef Enchilada Tortellini is a fusion of Tex-Mex and pasta comfort food, all in one skillet. With tender cheese tortellini, savory ground beef, and bold enchilada sauce, this 30-minute dinner is the perfect weeknight hero. It’s creamy, cheesy, and incredibly satisfying.


Ingredients

1 tablespoon olive oil

1 small yellow onion, diced

1 pound ground beef

2 tablespoons tomato paste

2 tablespoons taco seasoning

2 cups red enchilada sauce

20 ounces refrigerated cheese tortellini

1½ cups shredded Mexican blend cheese

½ cup sour cream (for topping)

2 tablespoons chopped fresh cilantro (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until soft, about 3–4 minutes.

2. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.

3. Stir in tomato paste and taco seasoning. Cook for 1–2 minutes to bring out the flavor.

4. Pour in the enchilada sauce and mix to combine with the beef mixture.

5. Add cheese tortellini directly to the skillet (uncooked if using fresh). Cover and simmer for 5–7 minutes, or until tortellini are tender.

6. Sprinkle shredded cheese on top. Cover again and let it melt, about 2–3 minutes.

7. Top with sour cream and fresh cilantro before serving.


Notes

For a lighter version, substitute ground beef with ground turkey or chicken.

Want it spicier? Use hot enchilada sauce and add diced jalapeños with the onions.

Frozen tortellini can be used—just simmer 2–3 minutes longer than fresh.
