Ingredients
1 can sweetened condensed milk (14 oz)
1 can coconut milk (13.5 oz)
3 whole eggs
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons melted butter
1 cup shredded coconut (for topping)
1 teaspoon baking powder
1 cup milk (for the topping sauce)
1/4 cup sugar (for the topping sauce)
1/2 cup coconut milk (for the topping sauce)
Instructions
1. Preheat oven to 350°F (175°C) and grease a bundt or ring pan with butter and flour.
2. In a blender or mixing bowl, combine sweetened condensed milk, coconut milk, eggs, melted butter, and regular milk. Blend until smooth.
3. Sift in the flour and baking powder, blending until no lumps remain. Batter will be slightly thin.
4. Pour into prepared pan and bake for 40 to 50 minutes or until golden and toothpick comes out mostly clean.
5. In a small saucepan, warm 1/2 cup coconut milk, 1/4 cup sugar, and 1 cup milk. Stir on low heat until slightly thickened.
6. Let cake cool slightly, then pour warm topping over it.
7. Sprinkle generously with shredded coconut.
8. Serve warm or chilled for a flan-like texture.
Notes
For extra flavor, toast the shredded coconut before topping.
Allow cake to cool slightly before adding topping so it absorbs evenly.
Store leftovers in the fridge for up to 5 days; flavor improves over time.
