2 large yellow onions

2 tablespoons butter or olive oil

8 ounces cream cheese, softened

1 cup sour cream

2 tablespoons mayonnaise (optional)

1/2 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons fresh chives, chopped (for garnish)


Instructions

1. Slice onions thinly. In a large skillet over medium-low heat, melt butter or heat olive oil. Add onions and a pinch of salt. Cook for 30–40 minutes, stirring occasionally, until deeply golden and caramelized.

2. Transfer the caramelized onions to a plate and let them cool completely to room temperature.

3. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise (if using). Mix until smooth and creamy.

4. Fold in the cooled onions and garlic powder. Season with salt and pepper to taste. Stir until evenly mixed.

5. Cover and refrigerate for at least 1 hour before serving. Garnish with fresh chopped chives and serve with chips, veggies, or crackers.


Notes

For richer flavor, caramelize onions slowly on low heat without rushing.

This dip is best made ahead of time and chilled to develop deeper flavor.
