Ingredients
1 lb chicken breast or thighs, cut into bite-sized chunks
1 ½ tablespoons Cajun seasoning
3 tablespoons butter
4 cloves fresh garlic, minced
12 oz rotini pasta
1 ½ cups heavy cream
1 cup freshly grated Parmesan cheese
2 tablespoons chopped parsley or chives (optional)
Instructions
1. Season chicken with Cajun seasoning. Heat 1 tablespoon of butter in a large skillet over medium-high heat and sear chicken until golden and cooked through. Remove and set aside.
2. Cook rotini pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
3. In the same skillet, melt remaining butter. Add minced garlic and sauté for 1 minute until fragrant. Stir in heavy cream and simmer.
4. Add Parmesan and stir until melted and smooth. Add reserved pasta water as needed to loosen the sauce.
5. Return pasta and chicken to the skillet. Toss well to coat in the creamy sauce.
6. Garnish with parsley or chives. Serve immediately.
Notes
Use fresh Parmesan for the best melt and flavor—pre-shredded cheese doesn’t blend as smoothly.
Let the garlic cook just until fragrant, not browned, to avoid bitterness.
Add a splash of pasta water before serving to refresh the sauce if it thickens too much.
