Juicy Cajun-spiced chicken bites are tossed with rotini pasta and smothered in a luscious Velveeta-mozzarella sauce that clings to every twist of pasta. Ingredients

1 lb boneless skinless chicken breasts or thighs

2 tbsp Cajun seasoning

12 oz rotini pasta

1 cup Velveeta cheese, cubed

1 cup shredded mozzarella cheese

1 cup heavy cream

2 tbsp butter

1 tbsp chopped parsley (for garnish)

Salt and pepper to taste

½ cup reserved pasta water (as needed)


Instructions

1. Cut the chicken into bite-sized cubes. Season generously with Cajun seasoning, a bit of salt, and pepper.

2. In a skillet over medium-high heat with oil, sear the chicken pieces until golden and cooked through, about 6–8 minutes. Remove and set aside.

3. Bring a pot of salted water to a boil. Cook rotini until al dente. Reserve ½ cup pasta water, then drain the rest.

4. In the same skillet, reduce heat to medium. Add butter and melt. Stir in heavy cream. Once warm, add Velveeta and mozzarella. Stir continuously until the cheese is fully melted and the sauce is smooth. Add pasta water if needed to loosen the sauce.

5. Add the drained rotini and cooked chicken into the cheese sauce. Toss gently until well-coated. Let simmer for 2–3 minutes.

6. Sprinkle chopped parsley over the dish before serving. Enjoy immediately.


Notes

For extra creaminess, stir in a bit more heavy cream or reserved pasta water as needed.

Mozzarella adds that signature cheese pull—don’t skip it!

You can use thighs for juicier chicken or breasts for a leaner bite.
