2 pounds peaches, sliced

1/2 cup granulated sugar

1 cup brown sugar

1 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup unsalted butter (1 stick)

1 cup whole milk

1 tablespoon vanilla extract

1/2 teaspoon cinnamon (optional)


Instructions

1. Slice peaches and place them in a bowl. Add granulated sugar and let them sit for 15–20 minutes to release their juices.

2. Preheat oven to 350°F (175°C). Place butter in a 9×13 inch baking dish and melt it in the oven.

3. In a separate bowl, whisk together flour, brown sugar, baking powder, and salt.

4. Stir in milk and vanilla extract to form a smooth batter.

5. Pour batter over the melted butter in the dish. Do not stir.

6. Spoon sugared peaches and their juices over the batter. Again, do not stir.

7. Optionally sprinkle cinnamon over the top.

8. Bake for 40–45 minutes until the crust is golden brown and bubbling.

9. Let cool for 10–15 minutes and serve warm with ice cream or whipped cream.


Notes

Let the peaches sit with sugar for at least 15 minutes to bring out the best syrupy sweetness.
