Description

This Buttery Onion Rice is a simple, flavorful side dish made with caramelized onions, butter, and fluffy jasmine rice simmered in savory broth. It’s the perfect complement to meats, veggies, or saucy mains, bringing comfort and richness to any meal.


Ingredients

1 tablespoon butter

1 medium yellow onion, thinly sliced

1 tablespoon butter (additional for toasting)

2 cloves garlic, minced

1 cup jasmine or basmati rice

2 cups chicken broth (or vegetable broth for vegetarian option)

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion and cook slowly for 15–20 minutes, stirring occasionally, until golden and caramelized.

2. Push the onions to one side of the pan and melt an additional tablespoon of butter. Add the minced garlic and dry rice. Toast for 2–3 minutes until the rice is lightly translucent and aromatic.

3. Pour in the broth and season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

4. Remove from heat and let the rice sit covered for 5 minutes. Fluff gently with a fork.

5. Stir in the parsley, adjust seasoning if needed, and serve warm.


Notes

For deeper flavor, use homemade broth or bone broth.

If using brown rice, increase broth to 2 ½ cups and simmer for 40–45 minutes.

Add extra butter at the end for an even creamier finish.
