These Buttery Belgian Liege Waffles are rich, golden, and caramelized with pearl sugar. Their brioche-like dough makes them unlike any ordinary waffle. Crispy on the outside, tender inside, they’re perfect for a cozy breakfast or indulgent dessert.

3 1/2 cups all-purpose flour
3/4 cup whole milk, warmed
2 1/4 tsp active dry yeast (1 packet)
3 tbsp granulated sugar
2 large eggs
1 cup unsalted butter, softened
1/2 tsp salt
2 tsp vanilla extract
1 1/2 cups Belgian pearl sugar
Instructions
- In a small bowl, combine warm milk, sugar, and yeast. Let sit until frothy (5–10 minutes).
- In a large bowl, mix flour and salt. Add yeast mixture, eggs, and vanilla. Stir until combined.
- Knead in the softened butter until the dough is smooth and elastic (8–10 minutes).
- Cover and let rise in a warm place for 1 to 1.5 hours until doubled.
- Gently deflate the dough and fold in pearl sugar.
- Divide into 8–10 pieces. Shape into balls and let rest 15–20 minutes.
- Heat Belgian waffle iron and lightly grease. Cook each dough ball 3–5 minutes or until golden.
- Let cool slightly. Serve warm with toppings of choice.
