Ingredients
500g chicken breast or thighs, cut into bites
3 tablespoons buffalo sauce
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
250g rotini pasta
2 tablespoons butter
1 cup heavy cream
2 tablespoons cream cheese
1 tablespoon ranch seasoning
1 teaspoon Cajun seasoning
1/2 cup shredded Parmesan cheese
2 tablespoons chopped parsley or green onion
Instructions
1. Cut chicken into bite-sized chunks and marinate with olive oil, minced garlic, buffalo sauce, salt, and pepper for 10–15 minutes.
2. Heat a skillet over medium-high and sear the chicken until golden and fully cooked. Set aside.
3. Cook rotini pasta in salted water until al dente. Reserve 1/2 cup of the pasta water and drain the rest.
4. In a saucepan, melt butter. Stir in cream cheese and ranch seasoning until smooth.
5. Add heavy cream, whisk well, then mix in Cajun seasoning and Parmesan. Simmer until thickened.
6. Toss in cooked pasta and stir to coat. Use pasta water to adjust sauce consistency if needed.
7. Serve pasta topped with chicken bites and garnish with parsley or green onion.
Notes
For milder heat, reduce buffalo sauce or use a mild version.
Use freshly shredded Parmesan for the smoothest, creamiest sauce.
