These Buffalo Chicken Quesadillas are spicy, cheesy, and ultra satisfying. Made with shredded chicken, tangy buffalo sauce, and melty cheddar all tucked in golden crispy tortillas, they’re the perfect quick dinner or game day favorite.
Ingredients
1 ½ cups shredded cooked chicken
⅓ cup buffalo sauce
4 oz cream cheese, softened
1 cup shredded cheddar cheese
4 large flour tortillas
1 tbsp butter or oil (for cooking)
Instructions
1. In a medium bowl, mix the shredded chicken, buffalo sauce, and softened cream cheese until smooth and well combined.
2. Heat a large skillet over medium heat. Add a small amount of butter or oil to lightly grease the surface.
3. On one half of each tortilla, spread a generous layer of the buffalo chicken mixture. Top with shredded cheddar cheese and fold the tortilla over to close.
4. Place quesadillas onto the hot skillet and cook for 2–3 minutes on each side until golden brown and the cheese is melted.
5. Remove from heat, slice into wedges, and serve warm with ranch or blue cheese dressing.
Notes
Use rotisserie chicken to save time and boost flavor.
Add extra buffalo sauce or jalapeños if you want a spicier version.
Reheat in a skillet or toaster oven to maintain crispiness—avoid the microwave for best texture.
