Ingredients
1 cup unsalted butter, softened
0.75 cup powdered sugar (plus more for coating)
1.75 cups all-purpose flour
0.25 cup cornstarch
1 tablespoon fresh lemon zest
1.5 teaspoons lemon extract
1 teaspoon vanilla extract
0.25 teaspoon salt
1 drop yellow food coloring (optional)
Instructions
1. Cream the softened butter in a large bowl until smooth.
2. Add powdered sugar and beat until light and fluffy.
3. Mix in lemon zest, lemon extract, vanilla extract, salt, and optional food coloring.
4. Gradually add flour and cornstarch. Mix until a soft dough forms.
5. Wrap dough and chill for at least 30 minutes in the refrigerator.
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Roll dough into 1-inch balls and place them on the sheet, spaced apart.
8. Bake for 12–14 minutes, until bottoms are just lightly golden.
9. Let cookies cool slightly and roll them in powdered sugar while still warm.
10. Once fully cooled, roll them again for a snowy finish.
Notes
Always chill the dough—this prevents spreading and gives the cookies their round snowball shape.
Double-roll in powdered sugar: once while warm, and once cooled for that iconic snowy coating.
