Ingredients
12 oz bowtie (farfalle) pasta
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
8 oz Velveeta cheese, cubed
1 cup heavy cream or milk
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt (or to taste)
1/2 teaspoon Italian seasoning
1 tablespoon olive oil
Fresh parsley for garnish (optional)
Instructions
- Cook the Pasta – Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain and set aside.
- Brown the Beef – Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
- Add Seasonings and Tomatoes – Sprinkle the cooked beef with paprika, black pepper, salt, and Italian seasoning. Stir in the can of Rotel tomatoes and let it simmer for 5 minutes.
- Melt the Velveeta Cheese – Reduce heat to low and add the cubed Velveeta cheese to the skillet. Pour in the heavy cream or milk and stir continuously until the cheese melts and forms a smooth sauce.
- Combine with Pasta – Add the cooked bowtie pasta to the skillet and toss everything together until the pasta is fully coated in the cheesy beef sauce. Let it cook for another 2 minutes.
- Serve and Garnish – Remove from heat and garnish with fresh parsley if desired. Serve hot and enjoy!
