Description
A creamy, cheesy, and slightly spicy dip made with sour cream, ranch seasoning, Rotel tomatoes, and cheddar cheese. Perfect for parties, picnics, or lazy afternoons with chips or veggies!
Ingredients
1 cup sour cream
1 packet ranch seasoning mix (about 1 ounce)
1 can (10 oz) Rotel tomatoes with green chiles, well-drained
1 cup shredded cheddar cheese
Optional: 2 tablespoons diced jalapeños or 2 tablespoons chopped green onions
Instructions
1. Drain the Rotel tomatoes using a fine mesh strainer to remove excess liquid.
2. In a large mixing bowl, combine the sour cream and ranch seasoning. Stir until smooth.
3. Fold in the drained Rotel tomatoes and shredded cheddar cheese. Mix gently.
4. Stir in jalapeños or green onions if using, for extra flavor and texture.
5. Cover and chill the dip in the fridge for at least 1 hour to allow flavors to meld.
6. Serve cold with chips, crackers, or veggie sticks. Optionally, garnish with cheese or herbs.
Notes
Make sure to fully drain the Rotel tomatoes to avoid a watery dip.
This dip is best made ahead and chilled for optimal flavor.
You can substitute Greek yogurt for a lighter version with added protein.
