Instructions

  1. Make the blueberry filling: Combine blueberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat. Stir until thickened and glossy, about 5–7 minutes. Cool completely.
  2. Make the cheesecake filling: Beat softened cream cheese with powdered sugar and vanilla until smooth.
  3. Prepare pastry: Roll out puff pastry sheets on a floured surface. Spread cream cheese mixture and blueberry filling.
  4. Roll and slice: Roll into logs and cut into 1–1.5 inch slices.
