23 medium blood oranges, peeled and sliced

2 ripe avocados, sliced

5 oz arugula

1/3 cup crumbled feta cheese

3 tablespoons olive oil

1 tablespoon orange juice (freshly squeezed)

1 teaspoon white wine vinegar

salt, to taste

cracked black pepper, to taste


Instructions

1. Slice the blood oranges into rounds or half-moons.

2. Cut the avocados in half, remove the pit, and slice them into wedges.

3. Wash and dry the arugula thoroughly.

4. In a small bowl or jar, whisk together olive oil, orange juice, white wine vinegar, salt, and black pepper until combined.
