Description
This Blackberry Cobbler is the definition of easy comfort baking. Juicy blackberries bake into a soft, golden-brown batter that rises over a pool of bubbling fruit. It’s sweet, slightly tart, and incredibly satisfying. Whether you’re using fresh or frozen berries, this cobbler comes together in minutes and tastes like summer in every bite.
Ingredients
1/2 cup unsalted butter
1 cup self-rising flour
1 cup granulated sugar
1 cup milk
2 cups blackberries (fresh or frozen)
1 tablespoon lemon juice (optional)
1 teaspoon vanilla extract (optional)
Instructions
1. Preheat oven to 350°F (175°C).
2. Pour melted butter into a 9×9-inch baking dish.
3. In a bowl, mix flour, sugar, and milk until just combined. Stir in vanilla if using.
4. Pour batter over the melted butter. Do not stir.
5. Evenly scatter blackberries on top of the batter. Drizzle lemon juice if using.
6. Bake for 45–50 minutes or until the top is golden and edges are bubbly.
7. Cool for at least 10 minutes before serving. Serve warm with ice cream or whipped cream.
Notes
Do not stir the batter once poured over butter—it forms the classic cobbler crust.
Use self-rising flour only. If using all-purpose, add baking powder and salt.
For crispier topping, bake a few extra minutes until golden brown and bubbly.
