Description

These Best Peanut Butter Cookies are soft in the center, lightly crisp on the edges, and packed with rich, nutty flavor. With a one-bowl method and no chilling required, they come together effortlessly for a quick snack, lunchbox treat, or holiday gift.


Ingredients

1 cup peanut butter

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

Flaky sea salt (optional, for topping)


Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone mat.

2. In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until fluffy.

3. Add the egg and vanilla extract, mixing until smooth.

4. Stir in flour, baking soda, and salt just until the dough forms. Do not overmix.

5. Roll dough into 1-tablespoon-sized balls. Place on baking sheet 2 inches apart. Flatten with fork in a crisscross pattern.

6. Bake for 9–11 minutes, until edges are golden and centers are just set.

7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Optionally, sprinkle with flaky sea salt while warm.


Notes

Do not overbake—remove from oven when the centers still look slightly soft.

For thicker cookies, chill the dough for 15–20 minutes before baking.

Avoid natural peanut butter to ensure the dough holds together perfectly.
