It’s easy to prep ahead and works beautifully in pies, crisps, pastries, or even as a topping for oatmeal or ice cream. Once you taste it, store-bought filling will never compare.
Ingredients
6 cups sliced apples (Granny Smith, Honeycrisp, or a mix)
1/2 cup brown sugar
1/4 cup granulated sugar
1/4 cup cornstarch
1 1/2 cups water
1 tablespoon lemon juice
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
Instructions
1. Peel, core, and slice the apples into even 1/4-inch thick slices.
2. In a large saucepan, combine water, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg (if using), and salt. Whisk until smooth.
3. Bring the mixture to a gentle boil over medium heat, stirring constantly until it thickens into a glossy syrup.
4. Stir in the lemon juice.
5. Add the sliced apples and gently fold to coat them in the syrup.
6. Simmer for 8–10 minutes, stirring occasionally, until the apples are tender but not mushy.
7. Remove from heat and let the mixture cool.
8. Transfer to airtight jars or containers for storage.
Notes
Use a mix of apple varieties for a more dynamic flavor profile.
Don’t skip the lemon juice—it prevents browning and adds bright contrast.
Let the filling cool completely before storing or using in baked goods.
