4 medium red beets
1/2 cup crumbled feta cheese
2 tablespoons fresh dill, chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar

Instructions
- Preheat oven to 400°F (200°C). Scrub beets clean and trim the ends.
- Wrap each beet in foil and place on a baking sheet. Roast for 45–60 minutes, or until fork tender.
- Allow beets to cool slightly, then peel off skins and slice into 1/4-inch rounds or wedges.
- In a large bowl, drizzle sliced beets with olive oil and red wine vinegar. Season with salt and pepper.
- Gently fold in feta cheese and chopped dill. Toss lightly to combine.
- Serve immediately, or chill for 30 minutes for enhanced flavor.
