Description

This Beef Stroganoff recipe is the ultimate comfort dish with tender slices of seared beef, earthy mushrooms, and a creamy sour cream sauce, all served over egg noodles or mashed potatoes. It’s a hearty, one-pan meal that’s easy enough for weeknights but rich enough for a dinner party.


Ingredients

1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium yellow onion, chopped

2 cloves garlic, minced

8 oz cremini mushrooms, sliced

2 tablespoons all-purpose flour (optional)

1 cup beef broth

1 tablespoon Dijon mustard

1/2 cup sour cream

2 tablespoons fresh parsley, chopped

salt and pepper, to taste


Instructions

1. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add beef in a single layer and sear until browned, about 2-3 minutes per side. Remove and set aside.

2. In the same pan, add remaining butter. Sauté chopped onion until translucent. Add garlic and cook for 30 seconds.

3. Stir in mushrooms and cook until browned and tender, about 5 minutes.

4. Sprinkle flour over mushrooms (if using) and stir to coat evenly.

5. Gradually pour in beef broth while stirring. Add Dijon mustard and simmer until slightly thickened.

6. Return beef to the pan and simmer for 5 minutes to absorb flavors.

7. Remove from heat, stir in sour cream, and season with salt and pepper to taste.

8. Serve over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley.


Notes

Don’t overcook the beef — sear it quickly to keep it tender.

For a thicker sauce, use the optional flour or let it simmer a few minutes longer.

Always add sour cream off heat to prevent curdling and ensure a silky sauce.
