Description
These Baked Onions with Asiago Cheese are roasted until sweet and tender, then topped with golden, bubbling Asiago for a rich, savory finish. A simple side dish that pairs beautifully with hearty mains or can shine all on its own.
Ingredients
4 large yellow or sweet onions
4 tablespoons butter
1 cup vegetable or chicken broth
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 cup shredded Asiago cheese
1 tablespoon chopped fresh parsley (optional)
Salt and black pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C).
2. Peel the onions and trim both ends so they sit flat. Slice them in half horizontally. Remove a few inner layers to create a shallow well if desired.
3. Arrange onion halves cut side up in a baking dish. Place a pat of butter on each.
4. Pour broth around the onions, filling the bottom of the dish to help steam and soften them.
5. Sprinkle garlic powder, Italian seasoning, salt, and pepper evenly over the onion tops.
6. Cover the baking dish with foil and bake for 40 minutes.
7. Remove foil and top each onion half with shredded Asiago cheese.
8. Bake uncovered for 15–20 more minutes, until the cheese is golden and bubbly.
9. Sprinkle with fresh parsley and serve warm with a spoonful of the buttery broth.
Notes
For best texture, use yellow or sweet onions as they become tender and naturally sweet.
Removing a few inner layers of the onion helps hold extra cheese in the center.
You can prep this dish ahead and add cheese just before the final bake.
