Ingredients

4 cod fillets (6 oz each)

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 lemon, sliced

2 tablespoons fresh lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 tablespoons chopped fresh parsley


Instructions

1. Preheat oven to 400°F (200°C). Lightly grease or line a baking dish with parchment paper.

2. Pat cod fillets dry with paper towels. Season both sides with salt, black pepper, and red pepper flakes if using.

3. Arrange cod fillets in the baking dish. Drizzle with olive oil and top with minced garlic. Add lemon slices on and around the fillets.

4. In a small saucepan, melt butter over low heat. Stir in lemon juice and a pinch of salt and pepper. Pour this mixture over the fish.

5. Bake for 12 to 15 minutes, or until the cod is opaque and flakes easily with a fork.
