Description

This Authentic Swedish Cardamom Cake is a lightly spiced, tender-crumbed treat with a warm citrusy aroma. A traditional Scandinavian fika favorite, it’s simple to bake and perfect for pairing with coffee or tea.


Ingredients

2 teaspoons ground cardamom (preferably freshly ground)

1 ½ cups all-purpose flour

1 cup granulated sugar

2 large eggs

½ cup unsalted butter, softened

¾ cup whole milk

2 teaspoons baking powder

¼ teaspoon salt


Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. Grease and flour an 8-inch round or square cake pan, or line with parchment paper
  3. . In a bowl, whisk together the flour, baking powder, cardamom, and salt. In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Scrape down the bowl.
  4. Alternate adding the dry mixture and milk to the creamed butter, starting and ending with the dry ingredients.
  5. Mix until just combined. Pour batter into prepared pan, smooth the top, and sprinkle a little sugar if desired. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Optionally, dust with powdered sugar before serving.

Notes

Use freshly ground cardamom seeds from green pods for a more vibrant flavor.

Don’t overmix the batter; stir only until ingredients are combined to keep the crumb soft.

Cake is best served at room temperature with coffee or tea.
