2 lbs Yukon Gold or yellow potatoes
1/4 cup olive oil
1/4 cup fresh lemon juice
4 garlic cloves, minced
2 tsp dried oregano
1/2 cup vegetable or chicken broth
Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Peel (if desired) and cut potatoes into halves or quarters.
- In a bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Toss potatoes in the marinade and arrange cut side down in a baking dish.
- Pour broth around potatoes.
- Roast for 45-50 minutes, flipping halfway, until golden and tender.
