This hearty and flavorful Authentic Brunswick Stew is packed with pulled pork, shredded chicken, tender veggies, and a smoky Southern-style tomato broth. Perfect for cold nights or big gatherings, it’s a soul-warming dish that’s as comforting as it is delicious.
Ingredients
2 cups pulled pork
2 cups shredded cooked chicken
1 cup corn kernels (fresh or frozen)
1 can (28 oz) crushed tomatoes
1 cup lima beans
1 ½ cups diced potatoes
1 cup chopped carrots
1 cup chopped celery
1 large yellow onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 tablespoons Worcestershire sauce
½ cup BBQ sauce (optional)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
¼ teaspoon cayenne pepper
2 tablespoons vegetable oil (for sautéing)
Instructions
1. Heat oil in a large pot or Dutch oven over medium heat. Add onions, carrots, and celery. Sauté until softened, about 5 minutes.
2. Stir in the garlic and cook for 1 more minute until fragrant.
3. Add the chicken broth, crushed tomatoes, Worcestershire sauce, salt, pepper, paprika, and cayenne. Stir to combine.
4. Add the diced potatoes and lima beans. Simmer for 15–20 minutes, until potatoes are tender.
5. Stir in the shredded chicken, pulled pork, corn, and BBQ sauce (if using). Lower heat and simmer for another 30 minutes.
6. Taste and adjust seasoning as needed. Serve hot with cornbread or biscuits.
Notes
For richer flavor, use smoked meats or leftovers from BBQ.
Add extra broth if reheating, as the stew thickens when cooled.
