Ingredients
12 ounces spaghetti
1 pound ground beef
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons soy sauce
1 to 2 tablespoons chili paste or sambal oelek
2 teaspoons sesame oil
4 green onions, sliced
1 tablespoon brown sugar
1 tablespoon rice vinegar
Fresh cilantro for garnish
Salt for pasta water
1 tablespoon oil for cooking
Instructions
1. Boil the pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
2. In a large skillet or wok, heat oil over medium-high heat. Brown the ground beef, breaking it up until cooked and slightly crispy.
3. Add garlic and ginger to the beef. Stir and cook for 30 seconds until fragrant.
4. Pour in soy sauce, chili paste, rice vinegar, and brown sugar. Stir well to coat the beef. Add a splash of reserved pasta water to loosen the sauce if needed.
5. Toss in the cooked spaghetti and combine well. Add more pasta water if the sauce is too thick.
6. Drizzle sesame oil over the pasta, then top with green onions and cilantro. Serve hot with optional lime or chili flakes.

Reserve pasta water to help adjust sauce consistency when tossing with noodles.
