Ingredients
1 cup grated zucchini, well-drained
1 cup finely chopped or grated apples
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup vegetable oil
2 teaspoons vanilla extract
1/4 cup unsalted butter
1/2 cup brown sugar
2 tablespoons milk or cream
1/2 cup powdered sugar
Instructions
1. Grease a loaf pan and line it with parchment paper. Preheat the oven to 350°F (175°C).
2. Grate the zucchini and squeeze out excess moisture using a clean towel. Set aside.
3. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
4. In a separate bowl, beat eggs, oil, both sugars, and vanilla until smooth.
5. Stir in zucchini and apples into the wet mixture.
6. Add dry ingredients to the wet ingredients and mix until just combined.
7. Pour into the prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
9. In a small saucepan, melt butter and brown sugar. Stir until bubbling, then add milk.
10. Remove from heat and whisk in powdered sugar until smooth.
11. Drizzle frosting over slightly cooled bread. Let it set before slicing.
