Ingredients
12 slices salami
12 slices prosciutto
1 cup mozzarella cubes
1 cup provolone or cheddar cubes
1 cup cherry tomatoes
1 cup green olives
1 cup Kalamata olives
1 cup marinated artichoke hearts or roasted red peppers (optional)
2 tablespoons chopped fresh parsley or basil (for garnish)
2 tablespoons balsamic glaze (optional)
1 teaspoon cracked black pepper (optional)
12 wooden or bamboo skewers (6–8 inches)
Instructions
1. Gather all your ingredients and prep them: slice cheeses into cubes, drain olives and marinated vegetables, and fold meats into ribbons or quarters.
2. Soak wooden skewers in water for 10 minutes to avoid splinters if preparing ahead.
3. Assemble each skewer by alternating ingredients in a balanced order. A typical order could be: tomato, cheese, olive, meat, artichoke, second cheese, second olive.
4. Arrange the skewers on a large platter. Garnish with chopped herbs, drizzle balsamic glaze, and season with cracked pepper if desired.
5. Chill in the fridge for 30–60 minutes before serving, or serve immediately at room temperature.
