Ingredients
1 pound ground beef
2 cups elbow macaroni
1 medium onion, chopped
3 cloves garlic, minced
1 bell pepper, diced
2 cups tomato sauce
1 can (14.5 oz) diced tomatoes, with juices
2 cups beef broth
1 tablespoon Worcestershire sauce
2 teaspoons Italian seasoning
1 bay leaf (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar or parmesan cheese (optional)
Instructions
1. Heat a large pot or Dutch oven over medium heat. Add ground beef and cook until browned. Drain excess fat.
2. Add chopped onion and bell pepper. Sauté for 5 minutes until softened. Stir in minced garlic and cook for 30 seconds.
3. Add tomato sauce, diced tomatoes, Worcestershire sauce, beef broth, Italian seasoning, salt, pepper, and bay leaf. Stir well.
4. Bring to a simmer, then stir in elbow macaroni. Cover partially and cook over medium-low heat, stirring occasionally, for 12–15 minutes until pasta is tender.
5. Remove bay leaf. Stir in shredded cheese if using. Let rest off heat for a few minutes before serving.
Notes
For extra creaminess, stir in a splash of heavy cream or extra cheese before serving.
If the sauce thickens too much while resting, loosen it with a bit of warm broth.
Add veggies like peas or spinach in the last 5 minutes for a nutrition boost.
