Description

A bold, creamy, and spicy Mediterranean-inspired sauce made with tomato paste, harissa, garlic, and mayo. Perfect as a dip for fries, a spread in wraps, or drizzled over grilled meats.


Ingredients

2 tbsp tomato paste (double-concentrated preferred)

1/3 cup mayonnaise

1 tbsp chili paste or harissa (adjust to taste)

2 garlic cloves, minced (or 1/2 tsp garlic powder)

1 tsp white vinegar

1/2 tsp sugar

1/2 tsp smoked or sweet paprika

1 tbsp olive oil (plus extra for sautéing)

Fresh parsley, chopped (optional, for garnish)

Pinch of salt


Instructions

  1. Heat olive oil in a small saucepan over medium heat.
  2. Sauté the minced garlic for 1 minute until fragrant.
  3. Stir in the tomato paste and cook for 2–3 minutes, stirring constantly.
  4. Add the chili paste or harissa and cook for 1–2 minutes.
  5. Mix in vinegar, sugar, paprika, and salt. Simmer for 1 minute.
  6. Transfer the mixture to a blender or food processor.
  7. Add mayonnaise and olive oil. Blend until smooth and creamy.
  8. Let the sauce cool, then refrigerate for at least 30 minutes.
  9. Garnish with fresh parsley if desired and serve.
